Choux Mix

Usage: choux and éclairs mix
Product Details
Advantages:
• Easy to use and save time with traditional mix; ingredients are added in specific sequence, while instant mix all ingredients are added together at the same time which needs a lot of care when mixing components when heating and stirring continuously, and still face the problem of not getting homogenous dough.
• When using Choux Mix, you can only add eggs and water then mix for few minutes to get constant regular homogenous dough.
• Can be filled with "Filling Cream or Filling Cream Choco", or "Salsabeel Milk, Dark,or White".
• Doesn't dry out when left over night.
• Doesn't harden, thus remains easy to bite.

Recipe:
1000 gm Choux Mix - 1000 gm Water at approx. 42° C - 600 gm Fresh Eggs - 400 gm Oil.

Method:
• Mix choux mix powder with oil and one third the amount of eggs at low speed until achieving a smooth homogeneous mixture.
• Slowly add the rest of the egg while stirring at high speed.
• All-in method until a smooth homogeneous mixture is obtained.
• Pipe batter on a pan approx 25-30min at heat 220°C, use little steam.

Packing:
Multilayer paper bags 10 Kg or 25 Kg Net.

Storage Condition:
Keep in cool and dry place away from direct sun light (below 20° C).

Validity:
Valid for 1 year from production date under the right storage conditions.
